My birthday is two days away and I am just not feeling it this year. My friends are asking me what I want to do for my special day but I don’t really feel like doing anything! One thing I l-o-v-e BIRTHDAY CAKE. Actually birthday cake and ice cream-yum in the tum.

Gay Pride Parade NYC 2009

I have a friend visiting from Denmark right now and we have been doing a lot of walking around the city. Yesterday, we caught the Gay Pride parade down in the West Village. It was so much fun!!

The energy was electric, so many happy people. I love watching the drag queens and many creative floats (a lot of gay marriage themed). By the time we reached the parade it had been going for about 5 hours and still no end in sight.

Three Chinese Coins Tied with a Red Ribbon=Wealth!

A couple days ago I found three Chinese coins tied together with a red ribbon. The coins were sitting at the bottom of my apartment steps; tenants of my building usually leave items they no longer want there. Having read a book or two about Feng Shui, I knew the coins held some meaning so I scooped them up, thinking I would research them later. Today, I looked up the significance of the three coins with red ribbon, here is what I found:

Three old-style Chinese coins tied together with red ribbon activate the essence of good fortune. Keep these coins in each purse you own. It symbolizes a continuous source of income for an individual.

Awesome! Just what I need, wealth and luck Also lucky is giving these coins as a gift. So thanks to whoever left them there for me to pick up. Share the wealth baby!

Beet Muffins

When I was a kid, my mom would occasionally make canned beets for dinner. I hated them. They looked like squishy hockey pucks floating in thick, red syrup to me. My lips purse at the thought of eating one right now. I thought I had filed beets away forever.

However whilst living in Denmark, I rediscovered the beet in a whole new way. Served raw in salads! The sweet crunchy beet adds a new flavor to my crisp greens. :> I’m still not a big fan of the canned or pickled variety but I am ready to give beets a second chance.

Update: Spoke to mom about beet memories, she’s never tried them in salads and is excited to give it a try. :>

Updated update: The “artist” of the beet muffin picture requested we not use her valuable photo for our sweet little post about our mom, childhood memories, etc…

Pink Unicorn

Was walking home from a sunny day in Chinatown and saw this pink unicorn in atop a mound of junk. It was so odd and out of place, I had to take a picture of it. It kind of looks like a hippo. Can hippos be unicorns?

I just found something I really want. It’s a cupcake cake form. I’ve dreamt of giant cupcakes but never did I think I would live to see one. Oh and for those of you who are keeping track, it’s been almost a whole week since I posted anything about cake.

Yes, another cake post. I can’t help it I love cake! In fact, if i were stranded on a deserted island and I could take just one food with me it would be cake. No matter that it wouldn’t sustain me beyond a few days, I would still die with a big old smile on my face. :> Speaking of deserted islands, the Ace of Cakes gang made the cast and crew a LOST cake for their 100th episode. I stopped watching LOST after the 3rd season, (I felt like they were just jerking me around) but I plan to watch the whole series after it ends. I am planning a marathon LOST watching weekend in about 2 years, I’ll keep you posted. Don’t ask, it’s just how I do things. Back to the cake, I actually found this via Neatorama and they pulled it off Jorge Garcia’s blog, Dispatches from the Island. You know the guy who plays the big fella, Hurley? Two things: Who knew Hurley had a blog? and Why, even though he is stranded on a island, thousands of miles away from the nearest McDonald’s, does Hurley never lose any weight? No matter, Jorge’s blog is not too bad. He actually writes about his real life and not all that gaudy fan plot fantasy stuff you see on other actors blogs. I have added it to the Mod Muse blogroll because I would like to keep up with it. You should check it out too. :> Thanks to Jorge for the pics and Neatorama for the post. More pics after the jump…

Frikadeller Recipe

Wanna try making your own yummy Danish meatballs? Check out the recipe below!


DANISH MEATBALLS (FRIKADELLER)
1 lb. beef, ground 1/2 lb. pork, ground 1 tbsp. finely chopped onion or chives 1/2 c. sifted all-purpose flour 1 tsp. salt 1/4 tsp. pepper 1 c. milk 1/4 c. water 1 egg, beaten 3 tbsp. butter Combine in a large bowl beef, pork and onions or chives. Mix together flour, salt and pepper. Combine flour and meat mixtures. Add gradually, mixing vigorously, milk, water and egg. Blend vigorously until mixture is smooth and well blended.Heat butter in skillet. Using a tablespoon (not measuring spoon), drop meat mixture by rounded tablespoonfuls into skillet. (Meat will drop more readily from spoon dipped in melted butter.) Cook over medium heat until browned. Using a slotted spoon turn meatballs to brown evenly. Allow about 8-10 minutes to cook. Serve with Sweet – Sour Red Cabbage. About 3 dozen small balls.
